“A matter of feeling”
To make good wine, you need a lot of knowledge and experience. In order to make excellent wines, we believe, it takes a great deal of feeling, understanding and above all dedication. During the whole “wine-making process” from the vineyard to the cellar & finally into the bottle, we only use the most necessary analyses. Also, the time of harvest is not determined by sugar, acid and pH values, but by tasting and observation of the grapes and vines. That’s how we reach the perfect physiological ripeness of our grapes and in order to bring the optimum of diversity, taste and longevity into the bottle of wine of the winery Rainer Wess.
